A crispy samosa recipe

Disclaimer: To avoid health complications as a result of the enormous calorie content of this snack, I'll advise you have this once a month. 

Ingredients 

For the filling

  • 2 tbsp vegetable oil
  • 2 tsp chopped garlic
  • 2 tsp chopped ginger
  • 1 large chopped green chilli
  • 1 medium-sized onion, chopped
  • 1 tsp Cameron pepper
  • 1 tbsp lemon juice 
  • 3 boiled potatoes, chopped in cubes
  • Curry/basil leaves
  • Salt to taste

For the dough

  • 2 cups all-purpose flour 
  • 1 tsp nutmeg
  • 1/2 tsp salt
  • 4 tbsp vegetable oil 
  • 150ml cold water

Directions

1. In a frying pan, under medium heat, heat the vegetable oil. Once hot, add the garlic, ginger, Cameron pepper, green chilli, chopped onion, salt, lemon juice and stir.

2. Add the potatoes and curry/basil leaves. Stir properly. Now turn off the heat and leave to cool down.

3. In a tray, add the flour and vegetable oil. Mix till a fine bread crumb-like texture forms

4. Sprinkle water and knead with hands till the dough is tight and firm.

5. Roll the dough to a ball and cover with a plastic bag for 30 minutes

6. Now divide the dough into 10-15 parts. To one divided part, roll into a ball and knead flat with a rolling-pin. 

7. Using water, roll the divided part into a cone and add the filling. Use water to seal the ends of the dough after adding the filling. (Samosa has a triangular shape so make sure to get that shape before sealing).

8. Repeat step 7 on the other portions 

9. Under medium high temperature,  deep fry the dough for about 5 minutes; frying at intervals, high heat and medium heat.

10. Turn off the heat and let it cool

11. Serve
